Aromatic Rice
1 tablespoon olive oil
1 cinnamon stick 1 bay leaf 1 cup long grain rice 2 cups of water |
If you're a southern country girl like me, this will go against every thing your Mama taught you about rice. Trust me, though, it's wonderful. I call it Aromatic Rice because your whole house will smell wonderful.
First, you rinse the uncooked rice until the water runs clear. Let all the water completely drain from rice. While the water drains, pour the olive oil into the pot you cook rice in - a sturdy pot with a lid. On high heat put the cinnamon stick and the bay leaf into the hot olive oil. Let cook till it smells heavenly. Just a minute or two. Add rice and water. Bring to a boil. Put the lid on and turn down the heat to simmer. Cook about 15 minutes. Let sit for 5 more minutes without removing the lid. Then when you're ready to serve, remove the cinnamon stick and the bay leaf. |
