Roasted Potato Soup
Fresh potatoes, red, gold or russet (Amount of potatoes depends on how many people you're serving. For example, if use regular size russet or baking potatoes then I figure one potato per person and one to grow on.)
Fresh onions to taste - I use 1 or 2 small onions for 4 to 6 servings
Garlic - I use a clove per person but I like garlic
Rosemary and basil to taste
salt and pepper to taste
olive oil
Peel and soak your potatoes. While they're soaking cut up onions and garlic in chunks. Cut the potatoes into cubes. In a foil lined pan, put all above ingredients. Mix it all up so that seasonings and olive oil coat the onions and potatoes. Roast at 350 degrees for about an hour.
When the potatoes are done (the edges should be brown) put celery and fresh carrots cut in chunks in a crock pot with the roasted potatoes and onions. Add chicken broth and water to cover, more broth than water. Cook on low all day. About 30 minutes before you're ready to eat, make white sauce (recipe below) and slowly add to soup while stirring gently. Let it cook for about 30 minutes and you're done! My kids love it!
*Add fried bacon or chopped ham to the crock pot if you have it around. YUM!

White Sauce
2 tablespoons of butter, unsalted
2 tablespoons of flour
salt and pepper
sage
1 can of evaporated milk
Melt butter in a saucepan. Add seasonings to flour and add to butter a bit at a time. Stir it constantly. It will be thick. Add the canned milk, or cream if you want but the canned milk is cheaper, a bit at time until desired thickness but it needs to thick because this is your thickening agent for soup.
*Add any kind of cheese or cream cheese for a different treat.
