Summer Supper
I lb smoked sausage
2 stalks celery 3 cloves garlic 2 potatoes 1/2 onion Frozen mixed vegetables or fresh vegetables kosher salt and pepper to taste 1 - 2 tablespoons olive oil 1 cup chicken broth 1/2 tsp rosemary dash of cayenne |
Mince garlic and cut up onion and celery in chunks. Saute in olive oil until onions are clear. Chop the vegetables of your choice into chunks. I used summer squash, carrots and broccoli. Chop potatoes into chunks. Add vegetables to pan and saute briefly. Add more olive oil if you need it. Add chicken broth and seasonings. Add smoked sausage sliced. Bring to a boil. Put the lid on and simmer for about an hour. I served it with Lemon Basmati rice.
