Split Pea Soup
1 lb of dried split peas
16 oz chicken broth 1 whole onion, chopped fine 2 -3 stalks celery, chopped fine 2 - 3 fresh carrots, chopped 1/2 bulb of garlic, minced 1/2 lb shredded ham 1/2 tsp allspice 1 tsp thyme 2 bay leaves salt and pepper to taste |
Rinse peas well. Put in soup pot and add chicken broth. Add water to desired consistency. I added about a cup. Turn the heat on high to bring to a boil. Chop and add vegetables. Add spices and the ham. Add more water if you need to, whatever thickness you like your soups. Bring back to a boil. Stirring occasionally. Put a lid on it and turn it down to simmer. Cook about an hour. Keep an eye on the liquid and add water as needed, stirring. I serve with cornbread.
