Simple Black-eyed Peas
1 cup of dried black-eyed peas
1 cup of chicken broth ( I use low-sodium) 2 cloves of garlic, minced 1/2 an onion, chopped fine kosher salt to taste 1/2 teaspoon cayenne pepper 1 teaspoon thyme 1/2 cup of shredded ham 1 bay leaf |
Quick soak peas. Rinse until water runs clear. Put in a sturdy pot with chicken broth and add water until there's about a 1/2 inch of fluid above peas. Add all other ingredients. Bring to a boil. Stir. Put the lid on and turn the heat to simmer. Check frequently to ensure there's enough liquid. Cook until peas smoosh easily against side of pan. About 2 hours. Serve with aromatic rice.
