I have been so busy lately. I was so excited when I started this site but life just seems to plow over me sometimes. One reason this entry is being done at 1am is because I was bound and determined to add to the site today. I'll apologize now for the tired rambling.
What do we eat around here when I'm too busy to cook one of these recipes? Well, some nights it's a help yourself short order kitchen. Of course, I'm still the chief bottle washer but it works out. My son requested stew with leftover roast. We had pot roast in the crock pot. I will put that recipe on here as well as the leftover stew recipe. Easy and fast. Two of my favorite words in the kitchen.
The big upright freezer went out. I panicked and cooked everything that I didn't give away. I did it too fast to care about seasoning. Pure panic. So we ate but it was nothing to brag about. I must admit that it was easy to have everything precooked.
We had that fresh refrigerated pasta one night. A can of pureed tomatoes, an assortment of veggies, sauteed in olive oil, the holy trinity (garlic, onion and celery). A little seasoning. Dinner in 20 minutes. Good, too!
Recipes to look forward to this week:
The aforementioned pot roast and leftover stew. Banana Pudding (with a funny story thrown in). Chicken with Mango Salsa. Fancy Pork Chops (easy and so good.) Black-eyed Pea Jambalaya.
Cooking adventures for me this week:
Savory crepes! My first try at cooking this. I've eaten it but never tried to cook it before so we'll see...
French Vanilla Cake with white chocolate flakes
Something with the shrimp I got on sale...hmmm
Until next time...maybe I'll be a little more awake and aware...
